Spinach and bacon fritters

This is my first attempt at trying this new recipe. And it’s really delicious and simple to make only take a few minuets. Serve with bread or on its own if you like.


½ pk of vegan bacon, finely chopped

Handful of baby spinach leaves, finely chopped

120-175ml/ 4-6fl oz//1/2-1/4 cup plain gluten free flour

2 tablespoon vegan eggs,lightly beaten

Olive oil, for shallow frying

Pinch of salt and black pepper

2 stalks spring onion/scallions, finely chopped


1.Mix together in a medium bowl spinach,chopped bacon, spring onion/scallion, beaten eggs and then combine with salt and pepper to taste using a large spoon to mix all the ingredients together.

2.Heat oil in a frying pan. Using two tablespoons. Carefully spoon the spinach mixture into the hot oil. Cook over a medium-high heat until golden brown on the underside, then turn and cook the second side. Drain on kitchen paper. Add more oil if needed and heat before cooking more mixture.
