This Coffee cake can be serve alone after a meal, as a snack in between meals, or even for breakfast alongside a nice cup of coffee or tea.
1 ½ cups all purpose gluten free flour
½ cup and 2 tablespoons sugar, divided
½ teaspoon salt
2 ½ teaspoons baking powder
¼ cup vegan vegetable shortening, softened
¾ cup vanilla flavoured soy or almond milk
2 tablespoons ground flaxseed mixed with ½ tablespoons water
1/3 cup brown sugar
¼ cup all-purpose gluten free flour
½ teaspoon cinnamon
3 tablespoons vegan butter
Preheat oven to 375°F and grease an 8-inch round cake pan or similar sized pan. In a large mixing bowl, combine 1 ½ cups of flour, sugar, salt, baking powder, shortening, milk, and flaxseed and water mixture; mix thoroughly. Pour into greased cake pan.
In a medium mixing bowl, combine brown sugar, ¼ cup of flour, cinnamon and butter until crumbly and mixed well; sprinkle evenly on top of the batter. Bake for 25 minutes or until a cake tester inserted into the cake comes out cleanly when removed.
