Block of tofu
3 tbsp tomato purée
2 tbsp clear honey
2 tbsp Worcestershire sauce
1 tbsp chopped fresh coriander
250 g/9 oz cherry tomatoes, to garnish
Freshly cooked couscous or rice, to serve
Using a knife, to cut the tofu in small cubes into 2.5cm/1-inch chunks and place in a bowl. Mix the tomato purée, honey, Worcestershire sauce and rosemary together in a separate bowl, then add to the tofu tofu, stirring to coat evenly.
Soak 5 wooden skewers in a bowl of cold water for 30 minuets to prevent them from burning during cooking. Preheat the grill to medium. Thread the tofu pieces and cherry tomatoes alternately on to the skewers and place them on a grill rack.
Spoon over any remaining glaze and cook under the Preheated hot grill for 8-10 minutes, turning occasionally, until the tofu is cooked through. Transfer to 2 large serving plate, garnish with a fresh coriander and serve with freshly cooked couscous or rice. Taste nice with smoked tofu.
