6 tablespoons vegan butter, softened
7 tablespoons granulated sugar
6 tablespoons light brown sugar
1 vegan egg
¾ cup brown rice flour
½ teaspoon baking soda
1 tablespoon cocoa powder
3 ounces gluten-free dark, dairy-free sweet chocolate chips
1.Preheat the oven 350°f. Pace all the ingredients except the chocolate chips in a food processor and whiz until smooth, or beat together in a large bowl. Stir in the chocolate chips, and bring the mixture together with your hands to form a ball.
2.On a surface dusted lightly with rice flour, divide the mixture into 20 balls, then place them on baking sheets, well spaced apart, pressing down gently with the back of a fork.
3. Place in the Preheated oven for 8-10 minutes. Remove the cookies from the oven, let stand for a few minutes to harden, then transfer to a wire rack to cool.
