Can be be great to take on a picnic and serve with some fresh fruit or berries.
10 tablespoons (1 ¼ sticks) vegan butter, softened
1 cup granulated sugar
Grated rind and juice 1 orange
2 tablespoons clear honey
3 tablespoons marmalade
3 vegan eggs, beaten
2/3 cup brown rice flour
1 teaspoon gluten-free baking powder
1.Preheat the oven to 325°F. Grease and line an 8-inch square, deep baking pan. Place the butter and sugar in a large bowl, then beat until light and fluffy. Whisk together the orange rind and juice, honey marmalade, and eggs then beat into the creamed butter mixture, adding a little of the flour if the mixture curdles.
2.Stir in the remaining ingredients, then spoon into the prepared pan and place in the Preheated oven for about 1 hour, until just firm in the middle. Remove the cake from the oven and transfer to a wire rack to cool.
