Ackee and Bacon

Ingredients:

538g 1 can Ackee

8 rashers meat free

1 medium onion, finely diced

2 tbsp olive oil

1 tsp ground black pepper

Method:

Open Ackee and drain, and leave aside. Cut bacon rashers in small bite size pieces, heat olive oil in frying pan and add bacon piece to fry until a little crispy. Add onions to bacon and allow to cook for two minutes, then add Ackee and black pepper and a pinch of salt if needed. And serve with green cooked banana or roti.
