75 g/3 oz green cabbage, finely sliced
175 g/6oz broccoli, cut into small florets
175 g/6 oz cauliflower, cut into small florets
4 spring onions, finely chopped
Freshly grated,Parmesan style vegan cheese
Pinch of salt and pepper to taste
1 tbsp olive oil
Preheat the frying pan, and season all vegetables together with salt, pepper and spring onions.
Add the olive oil to pan, then add the cabbage, and let it simmer for 5 minutes then add the broccoli and cauliflower and broccoli allow to cook for 10-15 minutes then remove from the cook top and place in a ovenproof dish sprinkle the Parmesan cheese over vegetables. Preheat the oven to 180° C/350°F Gas mark 4. Bake for 10-15 minutes until browned.
