Four Vegetables in Cheese Sauce



1 small cauliflower

300 g/10 1/2 oz broccoli

2 carrots

1 a handful of baby potatoes

1 tbsp chopped fresh parsley

For cheese sauce

2 tbsp vegan butter

25 g/1 oz/1/4 cup flour

300 ml/10 fl oz 1 1/4 vegan milk

55 g/ 2 oz/ 1/2 cup vegan grated cheese


Wash and peel potatoes and boil in a saucepan until tender, then remove from heat and drained.

Wash the cauliflower and broccoli. Separate into florets peel the carrots and cut into batons. Steam all vegetables for 10 minutes until tender.

To make the cheese sauce, melt the butter in a small saucepan on low heat. Stir in the flour and cook, stirring constantly for 1 minute. Gradually stir in the milk and bring to the boil, stirring constantly. Remove from the heat, stir in the cheese and pour the cheese sauce over the steam vegetable with the boil potatoes. And served with one of your favourite dishes.
