Vegan vegetables Chop Suey



2 Carrots, cut lengthways
1 cup Cabbage , shredded
1 cucumber cuts, lengthways
Spring onions, sliced lengthways
2 tsp Garlic, finely chopped
2 tbsp Oil
200 gram Noodles shiitake washed and (drained well)
1 ok meatless ham
1/2 tbsp Soya sauce
1 tsp sugar
to taste Salt
Handful pak Choi, cut lengthways
240 ml/1 cup vegetable stock
1 tsp cornflour


How to Make Vegetable Chop suey

Mix together the , soya sauce, sugar, salt, cornstarch and add enough vegetable stock to make up to a cup. Keep aside.
Heat the 2 Tbsp oil and add the ham, saute for a few minutes then carrots, and cook for 5-10 minutes then add the cabbage, cucumber, and spring onions, garlic and noodles
Saute till a little tender but do not overcook vegetable
Add the vegetable stock mixture and cook, for a further 2 minute. And served with basmati rice
