Meatless mince pie


500g (17.5oz) meat less  mince

1 onion finely chopped

2 cloves of garlic

1 large carrot, diced in small cubes

2 tablespoons of tomato paste

1 cups  vegetable stock

1 teaspoon of thyme

1 cup Vegan cheese

1kg/2.25lbs of potatoes, peeled and diced in medium pieces


Preheat oven to 220°C/gas mark 7. And place peel potatoes in the oven to roast until golden brown and cook through. In the meantime cook onion, carrots, garlic and thyme then add the vegan mince and the tomato paste and cook for a few minutes then add the vegetable stock and season to taste and remove from heat when carrots are tender not too soft. Place the cooked mince a large dish, then remove potatoes from oven and add the potatoes covering the mince on top then add cheese on top of the potatoes and served hot with your favourite salad.
