Jalapeño poppers Baked Potatoes twice


2 large baking potatoes

2 large baking potatoes

1 large jalapeño pepper diced

4 ounces vegan cream cheese

4 ounces vegan cheddar cheese shredded

3 tablespoons vegan butter

1/4 cup oats milk

3 vegan slices bacon (crumbled or more as desired)

Paprika for sprinkling

Salt to taste

For Serving Vegan Sour Cream


1.Bake the potatoes at 360 degrees for 45-60 minutes, or until the insides have cooked from the heat and cool.

2. Slice the potatoes in half lengthwise scoop out the softened potato and add into a mixing bowl set aside the potato skins.

3.Add the jalapeño pepper cream cheese, cheddar cheese, butter, milk and salt. Stir until mixture becomes creamy.

4.Stir in about half of the crumbed bacon.

5.Scoop the mixture back into the potato skins and sprinkle them with paprika. Bake them at 350 degrees for 20 minutes.

6.remove, cool slightly and serve topped with bit of extra paprika, sour cream, fresh herbs, extra crumbled bacon jalapeño.
